A creamy beef and cheese Tex-Mex dish that is on my go to guest menu and my husband’s absolute favorite meal. I like to serve it with my Tex-Mex Rice and broccoli or green beans.

Ingredients
  

  • 1 lb. ground beef
  • 1 onion chopped
  • Salt
  • Pepper
  • Garlic powder
  • 1 tbsp chili powder
  • 1 15 oz. can refried beans
  • 1 can cream of mushroom soup
  • 1 cup salsa
  • 1 cup milk
  • 1 4 oz. can diced green chilies optional
  • 12 flour tortillas
  • About 2 cups shredded cheddar cheese

Instructions
 

  • In a skillet brown the ground beef and onion. Season with salt, pepper, garlic powder, and chili powder. Drain excess grease off. Add the refried beans and mix together. Remove from heat.
  • Grease a 9”x13” pan. In each flour tortilla spread a spoonful of beef and bean mixture and sprinkle a little cheese on top. Roll up and place in pan. Repeat with all 12 tortillas.
  • In a bowl mix cream of mushroom soup, salsa, and milk (and green chilies if desired). Pour over the tortillas. Sprinkle the top generously with cheese. Bake at 350 for about 40 minutes or until cheese is melted and bubbly.

Notes

Note: I usually don’t add the green chilies because it makes it too spicy for the kids (and me!).
