Pumpkin Raisin Bars
These pumpkin raisin bars are so moist and yummy, especially with the cream cheese icing. The pumpkin, raisins, and cinnamon just fill your mouth full of all the fall vibes. It’s very similar to a sheet cake and bakes in just 25 minutes.
Pumpkin Raisin Bars
Ingredients
Batter:
- 2 cups flour
- 2 cups granulated sugar
- 1/2 teaspoon salt
- 1 teaspoon baking soda
- 2 teaspoons cinnamon
- 1 teaspoon baking powder
- 4 eggs
- 1 cup olive oil
- 1 cup pumpkin
- 1 cup raisins optional
Cream Cheese Frosting:
- 4 tbsp butter
- 4 oz cream cheese
- 1 tsp vanilla extract
- 2 tbsp milk more as needed
- 3 cups powdered sugar
Instructions
- Put all the dry ingredients into a mixing bowl and mix together thoroughly. Add the rest of the ingredients and beat until well mixed.
- Pour the batter into a greased half sheet pan and bake at 350 for 20-25 minutes, or until a wooden toothpick inserted in the center comes out clean.
Cream Cheese Frosting:
- Cream the butter with a handheld mixer, then add cream cheese and beat till smooth and then add in the rest of the ingredients and beat until spreading consistency, adding more milk as needed. Spread over the cooled bars.
