Zucchini Fritters

This is one of my favorite ways to eat the late summer abundance of zucchini. Just grate it, mix it, and fry it and you’ve got a yummy fresh side dish for any meal.

Zucchini Fritters

Servings: 8 Fritters
Course: Side Dish

Ingredients
  

  • 2 cups shredded zucchini
  • 1 cup Panko bread crumbs
  • 2 eggs
  • 1/3 cup Parmesan cheese
  • 1/4 cup finely shredded Mozzarella cheese
  • 2 garlic cloves minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Oil for cooking

Method
 

  1. Grate unpeeled zucchini on a box grater, on the side with larger holes.
  2. Transfer zucchini into a mixing bowl and add remaining ingredients. Mix until well combined.
Preheat a skillet over medium low heat. Add some oil to pan. Scoop out even amounts of zucchini mixture and place into the skillet, gently pressing down to flatten into patties. 
Cook for about 5 minutes on each side or until nicely browned. Try to only flip once so there is less chance of them breaking apart.
