Rachel’s Homestyle Chili

This is a classic, hearty chili that is sure to become a family favorite. Full of ground beef and beans and all the warm chili spices, it goes perfect with a steaming pan of cornbread. It isn’t too spicy for the kids (and me!)


Ingredients needed:

  • ground beef
  • mild chili beans
  • onion 
  • diced tomatoes 
  • tomato paste 
  • water
  • oregano
  • chili powder
  • cumin
  • salt
  • black pepper
  • garlic powder
  • cayenne pepper, optional
  • sugar 


First you brown the ground beef with the chopped onion. Season the meat with salt, pepper, and garlic powder. Always season your meat while it’s cooking. If you wait to season it until after it’s cooked, it lacks flavor. Meanwhile in a pot, combine the rest of the ingredients and all the spices. Add the browned beef to the pot and taste so you can adjust the seasonings as needed. Simmer until all the flavors are nicely combined. 
The perfect accompaniment for this chili is a steaming hot pan of Skillet Cornbread

Ingredients
  

  • 2 lb. ground beef
  • 2 16 oz. cans mild chili beans
  • 1 medium onion chopped
  • 1 can 14.5 oz. diced tomatoes
  • 1 can 6 oz. tomato paste
  • 1 cup water
  • 2 tsp. oregano
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. salt
  • 1/2 tsp. black pepper
  • 1/2 tsp. garlic powder
  • 1/4 tsp. cayenne pepper optional
  • 1 tsp. sugar
  • additional salt and seasonings as preferred

Instructions
 

  • In a skillet cook beef and onion until brown. Season the meat with additional salt, pepper, garlic powder, and chili powder while it's cooking. Drain excess grease.
  • Transfer meat to a pot and stir in the remaining ingredients. Bring to a boil. Cover, reduce heat, and let simmer for about 30 minutes.
  • Serve with cornbread, shredded cheese, and sour cream.
