Cowboy Caviar
This delicious chip dip that we call cowboy caviar is full of zesty flavors and an excellent choice for your next party. I like to serve it at our Super Bowl Party and then for New Year’s I replace the black beans with black eyed peas and it’s amazing! I wait all year for it.
The flavors are so, so good and it’s hard to stop eating this until the bowl is empty. Enjoy!
What you need to make it:
The Salad:
- 2 cans (15 oz) black beans, rinsed and drained
- 1 can (17 oz) whole kernel corn, drained
- 2 large tomatoes, chopped
- 2 large avocados, peeled and chopped
- 1/2 red onion, chopped
- 1/4 cup fresh chopped cilantro
The Dressing:
- 1 Tbsp red wine vinegar
- 3 Tbsp lime juice
- 2 Tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
How to make it:
Combine all ingredients in a large bowl. Cover and chill. Serve with tortilla chips.

Notes
For a delicious New Years appetizer, replace the black beans with two cans of black-eyed peas.
