French Apple Cake

This yummy cake is full of apples and not too sweet. It goes perfectly with a cup of coffee or hot tea and looks so pretty for the little amount of work that goes into it.

Ingredients
  

  • 2/3 cup sugar plus more for sprinkling on top of cake
  • 1/2 cup butter 1 stick, room temperature
  • 2 eggs
  • 1 tsp vanilla extract
  • 3 tbsp apple juice
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 medium apples peeled, cored, and cut into 1/2-inch cubes
  • Powdered sugar optional

Instructions
 

  • Preheat oven to 350 degrees.
  • Grease and flour a 9” pan.
  • In a mixing bowl, beat together sugar and butter. Add eggs, vanilla, and apple juice. Beat well. It will look grainy. Add flour, baking powder, and salt until combined. Stir in chopped apples with a spoon.
  • Scrape into pan and sprinkle a tablespoon of sugar evenly over the top.
  • Bake for 40 minutes or until lightly brown and toothpick inserted in the center comes out clean.
  • Let cool. Remove from pan if desired. Sprinkle the top with powdered sugar.
