1/2cupbutter1 stick, room temperature
2eggs
1tspvanilla extract
3tbspapple juice
1cupall-purpose flour
1teaspoonbaking powder
1/4teaspoonsalt
2mediumapplespeeled, cored, and cut into 1/2-inch cubes

Instructions
Preheat oven to 350 degrees.
Grease and flour a 9” pan.
In a mixing bowl, beat together sugar and butter. Add eggs, vanilla, and apple juice. Beat well. It will look grainy. Add flour, baking powder, and salt until combined. Stir in chopped apples with a spoon.
Scrape into pan and sprinkle a tablespoon of sugar evenly over the top.
Bake for 40 minutes or until lightly brown and toothpick inserted in the center comes out clean.
Let cool. Remove from pan if desired. Sprinkle the top with powdered sugar.
