Ground Beef Scalloped Potatoes

This ground beef scalloped potato casserole is warm and creamy and hits the spot every time. It will forever remind me of Sunday lunch at my mom’s house. She usually served it with corn and applesauce and that is still my favorite way to serve it. My kids love this dish as much as me. 

Scalloped Potato Casserole

This is a very simple and hearty meat and potato dish. It’s potatoes and ground beef with an onion for flavor, milk for creaminess, and seasonings to bring it to life. Just five ingredients plus seasonings. 

Ingredients needed: 

  • Potatoes
  • Onion
  • Ground beef 
  • Butter, I use salted butter for everything 
  • Milk, I only use whole milk 
  • Salt
  • Pepper
  • Garlic Powder 

 

King Kutter Vegetable Cutter

If you have a King Kutter vegetable cutter it definitely helps make this dish a lot faster and easier to prepare but you can slice the potatoes by hand and it’ll be just as delicious. 

How to Prepare This:

  • Peel the potatoes and slice them and the onion thinly or put them through a vegetable cutter.
  • Place them in a large casserole dish and season generously with salt, pepper, garlic powder.
  • Slice the butter and place it on top of the potatoes.
  • Pour in some milk. You will add more milk as it bakes and as needed.
  • Bake in 375 degree oven for about 2 hours. Pull it out and stir every 30 minutes or so, adding more milk as needed to make it a smooth consistency that isn’t burning to the bottom of the pan.
  • While the potatoes are baking, brown the ground beef and season it with salt, pepper, and garlic powder. Drain off excess grease and stir the browned ground beef into the potatoes about 30 minutes to an hour before they’re done baking.

The end goal is a soft, smooth, creamy potato casserole. I like to serve it with sweet corn and applesauce. And I always like serving homemade bread at every meal.

I find that the best meals are the simple ones. This is a great recipe that stretches a dollar and still fills your family’s tummies with good tasty food. It is very easy to double this recipe. In all the pictures on this post I made a double recipe, using ten pounds of potatoes.
