Ground Beef Scalloped Potatoes

This ground beef scalloped potato casserole is a very simple and hearty dish that hits the spot. It’s potatoes, ground beef, an onion for flavor, milk for creaminess, and seasonings to bring it to life.

- 5 lbs potatoes peeled and sliced thinly
- 1 large onion thinly sliced or chopped
- 1 stick butter
- Salt
- Pepper
- Garlic powder
- Milk
- 1 lb ground beef
Peel the potatoes and slice them and the onion thinly or put them through a king cutter.
Place them in a large casserole dish and season generously with salt, pepper, garlic powder.
Slice the butter and place it on top of the potatoes.
Pour in some milk. You will add more milk as it bakes and as needed.
Bake in 375 degree oven for about 2 hours. Pull it out and stir every 30 minutes or so, adding more milk as needed to make it a smooth consistency that isn’t burning to the bottom of the pan.
While the potatoes are baking, brown the ground beef and season it with salt, pepper, and garlic powder. Drain off excess grease and stir the browned ground beef into the potatoes about 30 minutes to an hour before they’re done baking.
The end goal is a soft, smooth, creamy potato casserole. I like to serve it with sweet corn and applesauce.
