I do love my Bosch mixer from @pleasanthillgrain. It’s an absolute workhorse for large batches of dough. I like to transfer my dough into a different bowl for it to rise. It’s just easier for me to handle the dough that way because it’s such a large batch but you could just let it rise in the mixer bowl.
You can see how I check to see if I’ve added enough flour to my dough for a nice and smooth elastic dough. I rarely measure my flour, I just add till it’s right. 😄

Let’s talk Bone Broth! Anytime I cook a chicken or turkey, I will save the carcass and make broth. You can also use a whole chicken like I show in these pictures. Basically just throw your ingredients in the instant pot or you can use a slow cooker or just a pot simmering on the stovetop. This broth is so flavorful, full of healing nutrients and collagen, it’s good for gut and joint health and immune support. You can use it in any recipe that calls for broth. One more way to use the whole chicken and cross another thing off your grocery list!
Making the bone broth:
Ingredients:
One chicken carcass or whole chicken
2 carrots, cut in 2” pieces
2 celery sticks, cut in 2” pieces
One onion, cut in large chunks
Splash of vinegar
Salt
Pepper
Garlic powder
Parsley
Water
Directions:
Place chicken in an instant pot. Add carrots, onion, celery, and vinegar. Generously season with salt, pepper, garlic powder, and parsley. Fill the pot with water to just below the max line. Cover and pressure cook for 2 hours or more. You want the bones to be soft where you can snap/squish them between your fingers.
Canning the broth:
After it’s done cooking, strain the broth into clean canning jars leaving 1” headspace. Clean rims with vinegar water and place lids and rings on. Add 3 quarts water to the pressure canner. Place the jars in the canner, secure lid, and heat till a steady stream of steam is coming out. Place the regulator on. Heat to 14 pounds pressure or whenever the regulator starts rocking. (This will vary depending on your elevation. Check your canner’s directions.) Cook for 25 minutes for quarts. Turn off heat and let all the pressure out naturally. Open canner and let jars sit 10 minutes before removing jars from canner. Place hot jars on a towel and let rest for 12-24 hours until completely cooled.
Yield: 5-6 quarts

I don’t measure, I just use however much I have on hand but usually I can make two pans from one whole chicken and I use one can of enchilada sauce and 18 corn tortillas per pan. And I measure the cheese with my heart! 😄
Cheesy Chicken Enchiladas
Ingredients:
Bone-in chicken thighs
Corn tortillas
Mild green chili enchilada sauce
Shredded fiesta cheese
Directions:
Cover chicken with water and season with salt, pepper, and garlic powder. Bring to a boil and simmer until chicken is tender. Debone chicken and keep the broth warm in the pot.
In a baking pan spread a thin layer of enchilada sauce. On top of the sauce put a layer of corn tortillas that have been softened by being submerged in the pot of reserved hot chicken broth for about a minute, just until softened. On top of the tortillas spread a layer of shredded chicken followed by a layer of cheese. Repeat layers and top with softened tortillas and top with cheese.
Bake in 350 degree oven for about 30 minutes or until cheese is melted and lightly browned.
Tip:
You can use a rotisserie chicken and soften the corn tortillas by sautéing them in a little oil in a pan.

Roasted potatoes are a great side dish or just a yummy snack! I can never make enough of them in our house. We like to eat them with ranch and ketchup.
You can use any kind of potatoes- baby potatoes, russet, gold Yukon, seriously any! Cut the little ones in half, cut the big ones in wedges. You can choose to peel or leave the peel. They’re all good!
You can add Parmesan or leave it off. Experiment with the seasonings that you love. Just remember the oil because it helps them crisp up nice while cooking. 🥔

When the goal is to get dinner on the table but I don’t have a lot of time or brain power left to be creative, I opt for roasted sausage and veggies over rice for a delicious and nutritious dinner that’s quick to throw together!
Slice up some sausage and dump whatever veggies you have on a pan, make sure to add onions for flavor. Drizzle with olive oil, season generously with salt, pepper, garlic powder, and oregano, and bake at 400 degrees for about 30 minutes or so until veggies are soft.
While the veggies are roasting, cook up your rice. I rinse my rice to remove excess starch and help the kernels cook up less sticky and gummy. I like to cook my rice in broth for an added flavor boost and I season it generously with salt, pepper, garlic powder, and some parsley.
Enjoy this quick and yummy meal with your family!
