Ingredients

  • 1 lb. ground beef
  • 1 onion chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 tsp minced garlic
  • 4 cups chicken or beef broth
  • 1 can 14.5 oz. diced tomatoes
  • 1 can 15 oz. tomato sauce
  • 1 15-oz. can kidney beans, drained
  • 1 tsp cumin
  • 1 tbsp chili powder
  • 2 tsp dried oregano
  • 1 lb elbow macaroni
  • 3 cups

    shredded Monterrey Jack cheese

  • Desired Toppings: frito chips, shredded cheese, sour cream, and chopped cilantro

Method

  1. In a large skillet or Dutch oven, brown the ground beef and onion. Season with salt and pepper. Add the garlic once it’s almost done cooking so it doesn’t burn.
  2. Once the meat is browned add the broth, diced tomato, tomato sauce, beans, macaroni, cumin, chili powder, and oregano.
  3. Bring to a simmer and cook until the sauce is thick and the macaroni is al dente, about 12 minutes, stirring frequently to keep from burning on the bottom.
  4. Remove from heat and stir in the cheese.
  5. Serve, topping with frito chips, sour cream, cilantro, and more shredded cheese if desired.
