- Mix all ingredients in blender and blend till smooth. Place in fridge for 1 hour or overnight. Heat a nonstick pan over medium heat and oil. Pour 1/4 cup batter into pan and swirl around until thin. Cook about a minute on each side till lightly browned. Fill with your choice of filling and serve!
Greek Yogurt Filling:
- In a bowl beat cream cheese till smooth. Mix in the yogurt and sugar.
Notes
I have made this right away without letting the batter rest for an hour and they turned out fine.
You can use any kind of fruit that you want. Raspberries, blackberries, and bananas are delicious.
You can easily double this recipe.
